‘Stilnovo’ is a chain project, funded by the Tuscan Region to improve sheep milk quality through process and product innovations, the result of research and technologies developed by the Sant’Anna High School in Pisa, the Interdepartmental Centre of agro-environmental research of the University of Pisa and the Department of food production and environmental sciences of the University of Florence.

Pecorino Toscano PDO

To be labelled PDO, Pecorino Toscano must be made
according to the specifications in the Production Regulations,
which guarantees the product meets all the requirements to earn the PDO label.
